Valley business sends restaurants' wasted food to pig farms, FireSky Resort among clients that compost food
Cheryl Martin, FireSky Resort’s assistant general manager, said it was “astonishing” at first how much food was being left uneaten, and then how much was being recycled.
“When we realized how much we were sending out, we started looking to see if we could recycle in other ways,” she said.
FireSky’s staff also looks for ways to prepare less food for events, and employees make sure different types of waste go into the right bins. From January to July of this year, the resort diverted about 22.6 tons of food from landfills into recycling or composting programs.
The waste [from FireSky and its Taggia restaurant] is collected by Global Green Integrators several times a week...

“A resort in some ways is like an amusement park,” said John Scovell, chief executive of Dallas-based Woodbine Development Corp., owner of four U.S. hotels and resorts, including the Austin Hyatt Regency Lost Pines. “Every once in a while, you have to add a new ride” to keep it fresh. Mr. Scovell spoke about the resort industry and Woodbine's projects in June at a conference of the National Association of Real Estate Editors.
